Strawberry Smoothie

This delicious smoothie will turn into a great frozen dessert or can be given as a breakfast or snack food. The fruit will provide your baby with vitamin and mineral and the addition of coconut milk will provide healthy fats for your baby. We also suggest adding chia seeds which turn soft and gelatinous when added to liquid, chia seeds contain the perfect ratio of the omega fats and are a great source of protein and iron.

Ingredients:

  • 1 Cup coconut milk2015-03-04_0807
  • ½ cup rolled oats
  • 1 banana cut up
  • 1 Cup frozen strawberries
  • 1 tablespoon chia seeds
  • ½ teaspoons vanilla extract

Method:

  1. Blend all ingredients together
  2. Pour into freezer trays and leave to stand for ten minutes before freezing as the chia
    seeds will become gelatinous and absorb some of the liquid.

Dairy Free Avocado Mango Mousse

This mousse is easy to make and contains great fats which are essential for your babies growth, you can always double the recipe and serve for the whole family as an awesome healthy dessert.

Ingredients:

  • 1 Avocado2015-03-04_0701
  • 1 Mango
  • ½ cup coconut milk

Method:

  1. Cut up the Avocado and mango removing the stones.
  2. Place all ingredients in a blender until desired consistency
  3. Pour into baby freeze trays

Creamy Pumpkin Soup

This creamy soup is full of nutrition with loads of vegetables. In this recipe we use coconut milk however if your baby is old enough for dairy you could use cream or milk depending on how creamy you want it.

Ingredients:

  • 2015-03-03_09041 butternut pumpkin, peeled de-seeded and cubed
  • 1 large potato, peeled and cubed
  • 1 large carrot, peeled and roughly chopped
  • 1 onion, diced
  • 2 tbsp olive oil
  • 2 tbsp chicken flavoured stock powder
  • 1 can coconut milk
  • 1 Quart water
  • Salt and pepper

Method:

  • Heat oil in a pan and fry all vegetables until golden.
  • Add 1 L boiling water to the pan and stir in stock powder.
  • Add coconut milk
  • Bring to the boil and simmer for 20 minutes until all vegetables are soft.
  • Blend with stick blender until it reaches a smooth consistency.
